Instructions

  1. Preheat oven to 400°F. Heat a large skillet over medium high heat for 2 minutes. Add sausage slices and cook for 2 to 3 minutes until they begin to brown.
  2. Add in mushrooms, onion, and bell pepper and cook for 3 minutes or until onions become translucent.
  3. While sausage and vegetable mixture is cooking whisk eggs in a bowl with cream, salt, and smoky turmeric seasoning.
  4. Add kale to skillet and stir until it turns bright green and begins to wilt slightly. Pour egg mixture evenly into skillet and remove from heat.
  5. Sprinkle cheese and croutons on top of mixture in skillet and place in preheated oven for 4 to 5 minutes or until eggs are set in the middle of the pan. Remove and let rest for 2 to 3 minutes, then slice into wedges and serve.
