  • 1 tbsp Liquid aminos
  • 3/4 cup Avocado oil, or any neutral flavored oil
  • 12 oz Organic kale greens
  • 1/3 cup Grated Parmesan cheese, plus more as needed for garnish
  • 1 cup Prepared croutons, as needed for garnish

Instructions

  1. In a blender, add lemon juice, yogurt, garlic, mustard, and liquid aminos. Puree until smooth.
  2. With the blender running, slowly add oil in a thin stream until an emulsion forms. Season to taste with salt and lots of fresh cracked pepper, place in a container, and refrigerate until ready to use.
  3. When ready to serve, add kale to a large bowl along with 2 tablespoons of lemon juice and a pinch of salt. Using your hands, massage lemon juice into kale until softened and kale shrinks by almost half its volume.
  4. Add dressing as needed as well as Parmesan and croutons. Season to taste and serve. Caesar dressing will keep up to 3 days refrigerated.
  5. Chef's Note: Caesar dressing will keep up to 1 week when refrigerated.
