Kale, Basil and Pecorino Salad

Ingredients

  • 1/4 cup Fresh lemon juice, juiced
  • 2 Garlic clove, smashed
  • 1 1/2 tsp Worcestershire sauce
  • 1/2 cup Fresh basil, leaves loosely packed
  • 1/2 cup Extra virgin olive oil
  • 2 Lacinato Kale, thinly sliced or julienned fine
  • 1/3 cup Grated Pecorino Romano

Instructions

  1. In a blender, combine lemon juice, garlic, Worcestershire sauce, and basil. Puree and while blender is running slowly add olive oil until dressing is emulsified. Season to taste with salt and pepper as needed.
  2. In a serving bowl combine kale and pecorino with enough dressing to coat. Gently massage dressing into kale to help soften it. Season to taste as needed with salt and pepper.
