Kale Ash

Ingredients

  • 2 Lacinato Kale, roughly chopped, stems trimmed
  • 1/4 cup Extra virgin olive oil
  • 2 tbsp Smoked paprika

Instructions

  1. Preheat oven to 400ºF. Line a sheet pan with parchment paper and set aside.
  2. Place chopped kale into a large bowl, add olive oil, smoked paprika, and a generous pinch of salt and pepper. Toss everything to coat well.
  3. Spread out on prepared pan and roast 30 to 40 minutes or until kale is nicely browned and very crispy.
  4. Allow kale to cool to room temperature before crushing with a rolling pin to create ash and crumbs.
  5. Chef's Note: Use kale ash on top of salads or soups as a garnish, or mix into guacamole for extra flavor.
