Kale and White Bean Soup with Fennel and Couscous

Ingredients
- 1/4 cup Extra virgin olive oil
- 1 tbsp Fennel seeds
- 1 tbsp Dried oregano
- 8 oz Fresh Diced Savory Vegetables
- 1 tbsp Peeled Garlic Cloves, minced
- 6 oz Kale, approximately 4 cups packed
- 15 oz Cannellini beans, drained and rinsed
- 1/4 cup Fresh lemons, juiced
- 6 cups Unsalted Chicken Broth
- 1 cup Israeli Couscous
Instructions
- Set a large pot or Dutch oven over medium heat. Add oil and allow to get hot.
- Add fennel seeds and oregano and stir-fry 2 to 3 minutes to toast slightly before adding savory vegetable mix and garlic.
- Add a pinch of salt and pepper and continue to stir-fry until veggies are just starting to get color, approximately 5 to 7 minutes.
- Stir in kale and beans followed by lemon juice and chicken broth.
- Bring everything to a boil, reduce heat and stir in couscous.
- Continue to cook until couscous is just soft, approximately 10 to 14 minutes. Set heat to lowest setting and season to taste.
- Serve with Romano cheese and fresh chives, if desired.
