Kale and Quinoa Salad with Creamy White Bean Dressing

Ingredients

  • 15 oz White Beans, liquid included
  • 1 cup Red radishes, thinly sliced
  • 1 cup Quick Cook Grains
  • 1/2 tsp Ground black pepper
  • 1 cup Cherry tomatoes, halved
  • 1/4 tsp Kosher salt
  • 1 Medium gala apple, diced
  • 1 tbsp Pecorino Romano, grated
  • 1 Garlic cloves
  • 3 cups Kale, chopped
  • 1 tbsp Lemon(s), juiced

Instructions

  1. Place kale in a large bowl.
  2. Cook quinoa according to package directions. While quinoa is still hot, transfer to bowl with kale. Toss to combine and allow kale to wilt.
  3. Add apples, radishes and tomatoes to kale and quinoa mixture.
  4. To make dressing, place white beans, garlic, salt, pepper, lemon juice and cheese in a blender. Blend until smooth.
  5. Pour salad dressing over kale and quinoa mixture. Toss well and serve.
