  • 1 cup White onion, diced or chopped
  • 1 1/2 lb Diced Chicken Breast
  • 8 Corn tortillas, plus more as needed
  • 1 Avocado, diced, plus more as needed
  • 1 cup Queso Fresco, grated or crumbled small

Instructions

  1. Add oil to a large sauté pan or cast iron skillet set over medium-high heat.
  2. Once oil is hot, add peppers and onions with a pinch of salt and pepper, and stir-fry until just soft.
  3. Add chicken and cook until peppers and chicken are just starting to brown and chicken is fully cooked.
  4. To build tacos, heat tortillas then add chicken mixture and top with sliced avocado and queso fresco.
  5. Chef's Note: Garnish with crema, diced tomatoes, chopped cilantro and salsa if desired.
