Joe V's Easy Loaded Diced Chicken Tacos

Serves 4
Ingredients
- 3 tbsp Vegetable oil
- 1 cup Red bell peppers, diced small
- 1 cup White onion, diced or chopped
- 1 1/2 lb Diced Chicken Breast
- 8 Corn tortillas, plus more as needed
- 1 Avocado, diced, plus more as needed
- 1 cup Queso Fresco, grated or crumbled small
Instructions
- Add oil to a large sauté pan or cast iron skillet set over medium-high heat.
- Once oil is hot, add peppers and onions with a pinch of salt and pepper, and stir-fry until just soft.
- Add chicken and cook until peppers and chicken are just starting to brown and chicken is fully cooked.
- To build tacos, heat tortillas then add chicken mixture and top with sliced avocado and queso fresco.
- Chef's Note: Garnish with crema, diced tomatoes, chopped cilantro and salsa if desired.
