Jimmy Dean Breakfast Tacos

Ingredients

  • 12 Fully Cooked Pork Sausage Patties, coarsely chopped
  • 1/2 cup Red bell pepper, chopped
  • 1/2 cup Green bell pepper, chopped
  • 12 Large eggs
  • 1/4 cup Whole Milk
  • 1 tbsp Salted butter
  • 12 White Corn Tortillas
  • 1 cup Shredded Cheddar Cheese
  • 1/4 cup Fresh cilantro, chopped

Instructions

  1. Cook sausage and bell peppers in large non-stick skillet over medium heat 5 to 6 minutes or until sausage is thoroughly heated, stirring frequently. Remove from skillet and cover to keep warm.
  2. In a large bowl, beat eggs and milk with wire whisk until well blended. Melt butter in same skillet over medium-low heat. Add eggs; cook 6 to 8 minutes, stirring the entire time. Stir in sausage mixture; cook 1 to 2 minutes or until thoroughly heated. Remove from heat.
  3. Top each tortilla with about 1/2 cup egg mixture, 1/2 cup cheese and 2 tablespoons cilantro.
  4. Chef's note: Serve with salsa, if desired.
