Unsaved Jicama Chicken Chalupas

Ingredients

  • 1 1/2 cups Avocado
  • 14 oz Matchstick carrots
  • 5 oz Baby spring mix
  • 2 cups Fully cooked chicken breast, heated and diced
  • 1/4 cup Reduced fat medium cheddar cheese, shredded
  • 1 Jicama, peeled and sliced

Instructions

  1. To assemble, layer avocado, carrots, greens, chicken and cheese on each jicama slice.
  2. Season with salt and pepper and serve.
