Jasmine’s Cold Pasta

Unsaved Jasmine’s Cold Pasta

Ingredients

  • 16 oz Penne rigate pasta
  • 1 cup Tomatoes
  • 1 Cucumber
  • 1 cup Green bell pepper
  • 12 oz Beef smoked sausage
  • 2 tbsp Avocado oil
  • 16 oz Italian salad dressing
  • 1 tsp Black pepper
  • 1/4 cup Parmesan shredded cheese

Instructions

  1. Bring a large pot of water to a boil. Add pasta and cook according to package directions. Drain in a colander and set aside.
  2. While pasta cooks, dice tomatoes, cucumber, and green bell pepper into small dice. Slice the sausage and set aside.
  3. Heat a medium pan over high heat. Add oil and heat for an additional 1 to 2 minutes. Add sausage and cook until browned.
  4. Transfer cooked sausage to a large bowl and add diced veggies and pasta. Poor dressing over the top and toss to combine.
