Jalapeño Rice

Unsaved Jalapeño Rice

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1/2 cup White onion, chopped
  • 1 Jalapeno pepper, chopped
  • 1 cup Basmati rice
  • 1 1/2 cups Chicken broth

Instructions

  1. Heat olive oil in a large skillet on medium. Add onions and jalapeño, and sauté 2 to 3 minutes. Add rice and continue to cook 3 to 4 minutes, stirring constantly.
  2. Stir in broth, bring to a boil then reduce to a low simmer. Cover and cook 15 minutes.
  3. Remove from heat, season to taste with salt and pepper, fluff with a fork and serve.
