Jalapeño Rice

Ingredients
- 1 tbsp Extra virgin olive oil
- 1/2 cup White onion, chopped
- 1 Jalapeno pepper, chopped
- 1 cup Basmati rice
- 1 1/2 cups Chicken broth
Instructions
- Heat olive oil in a large skillet on medium. Add onions and jalapeño, and sauté 2 to 3 minutes. Add rice and continue to cook 3 to 4 minutes, stirring constantly.
- Stir in broth, bring to a boil then reduce to a low simmer. Cover and cook 15 minutes.
- Remove from heat, season to taste with salt and pepper, fluff with a fork and serve.
