Jalapeño Grilled Lamb Tortas

Serves 4

Ingredients

  • 1 lb Ground boneless leg of lamb
  • 1 cup Sweet onions
  • 1/2 cup Fresh cilantro, chopped
  • 1 Jalapeño pepper, seeded and chopped
  • 4 Wheat bolillos
  • 1 cup Grated cotija cheese
  • 16 oz Avocados, thin sliced

Instructions

  1. Combine lamb, onion, cilantro, and jalapeño. Do not overmix or it will be tough.
  2. Shape into 4 patties 1 inch thick. .
  3. Heat gas or charcoal grill to medium 375°F-400°F.
  4. Grill for 6 minutes, turning once and cooking to desired degree of doneness (145°F-155°F internal temperature).
  5. Place patty on half of bolillo, top with cheese, 3-4 slices of avocado, and the top of the bun.
