Unsaved Italian-Style Corn And Zucchini

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1/2 cup Sweet onions, chopped
  • 1 Garlic clove, chopped
  • 1 Medium Zucchini squash, chopped
  • 1 Medium Roma tomato, chopped
  • 14.8 oz Creamed style corn
  • 2 oz Shredded parmesan cheese

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add onion and cook 2 minutes or until tender stirring occasionally.
  3. Stir in garlic and cook 1 more minute.
  4. Add zucchini, tomato and corn; stir to combine.
  5. Heat the corn mixture until bubbly and reduce heat to medium-low.
  6. Cook for 8 to 10 minutes or until zucchini is tender.
  7. Top with shredded Parmesan.
