Italian-Style Corn And Zucchini

Ingredients
- 1 tbsp Extra virgin olive oil
- 1/2 cup Sweet onions, chopped
- 1 Garlic clove, chopped
- 1 Medium Zucchini squash, chopped
- 1 Medium Roma tomato, chopped
- 14.8 oz Creamed style corn
- 2 oz Shredded parmesan cheese
Instructions
- Heat oil in a large skillet over medium-high heat.
- Add onion and cook 2 minutes or until tender stirring occasionally.
- Stir in garlic and cook 1 more minute.
- Add zucchini, tomato and corn; stir to combine.
- Heat the corn mixture until bubbly and reduce heat to medium-low.
- Cook for 8 to 10 minutes or until zucchini is tender.
- Top with shredded Parmesan.
