Unsaved Italian Sausage & Zucchini Pasta Pomodoro

Ingredients

  • 4 Vegan hot Italian sausage links
  • 15.5 oz Marinara sauce
  • 24 oz Zucchini noodles

Instructions

  1. Preheat oven to 400ºF.
  2. Line a sheet pan with parchment paper. Add sausage links and bake for 15 to 20 minutes or until nicely browned.
  3. While sausage cooks, pour marinara sauce into a small pot. Set over low to medium heat and bring to a simmer. Allow to cook for 12 to 15 minutes or until ready to use.
  4. Once sausages are cooked, remove from oven and slice.
  5. To serve, divide zucchini noodles among 4 bowls and top each with sliced sausage and hot marinara sauce. Season to taste and garnish with Parmesan cheese and fresh basil, if desired.
