Italian Grilled Cheese "Ultimo Formaggio"

Serves 1

Ingredients

  • 2 tbsp Garlic tomato pasta sauce, plus more as needed
  • 2 slices White bread slices, plus more as needed
  • 2 slices Provolone cheese slices, plus more as needed
  • 2 slices Mozzarella cheese slices, plus more as needed
  • 1 slice Slice of Genoa salame, plus more as needed
  • 1 slice Slice of dry coppa, plus more as needed
  • 1 slice Slice of pancetta, plus more as needed

Instructions

  1. If you have a sandwich or panini press, allow it to preheat.
  2. Spread Garlic, Tomato & Chilli Stir In Sauce on both sides of each slice of bread.
  3. Place 1 slice each of provolone and mozzarella on 1 piece of bread then layer all of the meat and add remaining mozzarella and provolone.
  4. Top with second slice of bread and press sandwich together. Place in panini press and cook until bread is crispy and cheese is nicely melted.
  5. Cut and serve. Repeat process as needed for any extra sandwiches.
  6. Chef's Note: I like to add pickled red onions to this grilled cheese for an extra acidic bite. Recipe for "pickled red onions" available at HEB.com.
