Italian Chicken Frittata

Ingredients

  • 8 Large eggs
  • 1 cup Half & half
  • 1 1/2 cups Shredded parmesan cheese, divided use
  • 1/4 cup Fresh basil, chopped
  • 1 tbsp Extra virgin olive oil
  • 1/2 cup Red onions, diced
  • 2 tbsp Fresh garlic clove, minced
  • 1 cup Italian herb rotisserie chicken, pulled off the bone & chopped

Instructions

  1. Preheat oven to 400°F.
  2. Place eggs, half &half, 1 cup Parmesan cheese and basil in a bowl. Whisk until pale yellow or thoroughly combined.
  3. In small sauté pan, add olive oil and onion, and cook until onions are translucent.
  4. Add garlic and stir-fry another 1 to 2 minutes. Remove from heat and allow to cool.
  5. Add cooled garlic and onions to egg mixture along with the chicken. Mix to combine.
  6. In a muffin pan sprayed with non-stick cooking spray, fill muffin tins 3/4 full and sprinkle evenly with remaining Parmesan cheese.
  7. Bake 20 to 30 minutes or until puffy and golden brown and egg is set.
