Israeli Style Street Corn Salad

Ingredients
- 4 Ears corn on the cob, approximately 1.25 pounds
- 5 oz Lettuce mix
- 1 cup Grape tomatoes, sliced in half or quartered
- 1 cup English cucumber, diced small
- 1/2 cup Curly leaf parsley, chopped
- 2 tbsp Jalapeño pepper, stem and seeds removed, minced small
- 1/3 cup Red onions, minced fine
- 1 tsp Za'Atar Seasoning, plus more as needed to taste
- 1 cup Crumbled feta cheese, plus as needed
Instructions
- Preheat grill to 350ºF or medium-high heat.
- Grill corn until nicely charred on all sides, approximately 10 to 15 minutes. Remove from grill and set aside to cool.
- When corn is cool, cut kernals from the cob and place in a salad bowl.
- Add salad greens, tomatoes, cucumber, parsley, jalapeño, and red onions, and toss to combine. Season with Za'atar and top with crumbled feta cheese.
- Use your favorite dressing or simply add a few tablespoons of lemon juice and good quality extra virgin olive oil to the salad and toss to coat. Season with more Za'atar as desired.
