  • 12 oz Smoked sausage, sliced into 1 inch thick pieces
  • 1 1/2 cups Fresh red onion(s), roughly chopped (about half a large red onion)
  • 1 1/2 lb Fresh white shrimp shell-on, peeled, deveined
  • 4 Sweet corn on the cob, husks and silks removed and sliced in quarters
  • 6 tbsp Salted butter
  • 1 Instant pot duo
  • 1 tbsp Creole seasoning spice blend
  • 2 lb Small red potatoes

Instructions

  1. Set Instant Pot on "Sauté" setting. Add half of butter, half of seasoning and all of the onion to cooking chamber and cook just long enough to melt butter and soften onions slightly, about 2 minutes.
  2. Add sausage, potatoes and corn. Seal pot and set on "Manual" setting. Set timer to 4 minutes. Pressurizing can take from 10 to 15 minutes.
  3. When cooking time is complete open venting lever to release pressure manually. Be careful of steam escaping from lid.
  4. While Instant Pot is releasing pressure add remaining butter and seasoning to a large skillet. Toss in shrimp and sauté for 3 to 4 minutes, just to cook through (time will vary based on size of shrimp).
  5. Pour shrimp and juices over potato mixture and stir to coat. Serve immediately.
