Instant Pot Beef Bourguignon, Passport France

Ingredients

  • 1 fl oz Grapeseed oil
  • 1 lb Beef stew meat, season with salt & black pepper
  • 1/2 lb Bacon, cut into thin lardons
  • 1 cup Onion, small dice
  • 1/2 cup Celery, chopped
  • 1/2 cup Carrot, small dice
  • 1/2 lb Mushrooms, quartered
  • 1 pt Pearl onions, peeled
  • 9 3/4 fl oz Fischer & Wieser Red Wine Pan Sauce
  • 1 cup Beef broth, unsalted
  • 2 oz Butter, unsalted

Instructions

  1. Set instant pot to sauté setting and turn on. Once heated, add oil and seasoned beef, and sear until lightly browned. Remove meat from pot and set aside.
  2. Add bacon to the pot and cook until crisp. Using a slotted spoon, transfer the bacon to the container with the beef.
  3. Add onions, celery, and carrots to the pot and sweat until translucent, about 2 minutes. Add the meat and bacon back to the pot along with the mushrooms, pearl onions, red wine pan sauce and the broth. Turn off sauté setting.

  5. Set instant pot to meat/stew setting and securely engage the lid per manufacturer specifications.
  6. When timer expires, vent according to manufacturer's instructions. Remove lid and stir in butter and serve.
