Hummus & Cheese Star Kabobs

Ingredients

  • 16 slices Whole wheat crust less bread
  • 8 tbsp Traditional hummus
  • 8 Colby jack cheese slices
  • 1 Cucumber, cut into bite size spear
  • 16 Cherry tomatoes
  • 8 Bamboo Skewers
  • 1 Star shaped cookie cutter

Instructions

  1. Spread each slice of bread with 1 Tbsp. hummus.
  2. Top with a slice of cheese and another slice of bread.
  3. Using a star shaped cookie cutter, cut out 8 star shapes.
  4. Create each skewer by adding a tomato, piece of cucumber, star-shaped sandwich and then repeating the sequence until your desired combination. We used 2 star sandwiches, 3 tomatoes and 3 pieces of cucumber per sandwich kabob.
