Huevos Rancheros

Unsaved Huevos Rancheros

Ingredients

  • 1 Canola oil no-stick cooking spray
  • 3/4 cup Liquid egg
  • 2 tbsp Reduced fat Monterey jack cheese, shredded
  • 1/4 cup Fresh medium salsa
  • 4 White corn tortillas

Instructions

  1. Heat a heavy bottom skillet over on medium for 2 minutes.
  2. Coat pan with non-stick spray and then cut tortillas into strips and add to pan.
  3. Carefully add Real Egg product over tortilla strips and cook eggs for 2 minutes to desired doneness.
  4. Pour salsa into a microwave safe bowl and heat for 45 seconds or until warmed. Remove and set aside.
  5. Top eggs with cheese and heated salsa.
