Horseradish Pimento Cheese

Ingredients
- 1/2 cup Mayonnaise
- 1/2 cup Roasted red bell pepper
- 1/4 tsp Salt
- 1 1/2 tbsp Lemon juice
- 1/4 cup Fresh horseradish root, peeled and grated finely
- 6 oz Thick cut shredded sharp Cheddar cheese
- 6 oz Thick cut shredded Colby & Monterey Jack cheese
- 2 tbsp Green onion, green tops only
Instructions
- In a food processor or blender add mayonnaise, red bell pepper, salt, lemon juice, and horseradish root. Blend until no large pieces of pepper remain. Transfer to a large bowl.
- Add both cheeses and green onions to the bowl. Stir until well incorporated and all the cheese is coated with the mayonnaise mixture.
- Serve immediately but it's best when covered and chilled in the refrigerator for 4 hours to overnight.
