Horseradish Pimento Cheese

Unsaved Horseradish Pimento Cheese

Ingredients

  • 1/2 cup Mayonnaise
  • 1/2 cup Roasted red bell pepper
  • 1/4 tsp Salt
  • 1 1/2 tbsp Lemon juice
  • 1/4 cup Fresh horseradish root, peeled and grated finely
  • 6 oz Thick cut shredded sharp Cheddar cheese
  • 6 oz Thick cut shredded Colby & Monterey Jack cheese
  • 2 tbsp Green onion, green tops only

Instructions

  1. In a food processor or blender add mayonnaise, red bell pepper, salt, lemon juice, and horseradish root. Blend until no large pieces of pepper remain. Transfer to a large bowl.
  2. Add both cheeses and green onions to the bowl. Stir until well incorporated and all the cheese is coated with the mayonnaise mixture.
  3. Serve immediately but it's best when covered and chilled in the refrigerator for 4 hours to overnight.
