Honey Mango Chicken Kabobs

Unsaved Honey Mango Chicken Kabobs

Ingredients

  • 1 cup Frozen mango chunks
  • 1 tsp Fresh ginger root
  • 1 tbsp Honey
  • 2 tbsp Canola oil
  • 2 Peeled garlic cloves
  • 2 tbsp Seasoned rice wine vinegar
  • 1 lb Boneless skinless chicken breasts, cut in 2-inch pieces

Instructions

  1. In a food processor or blender, combine mango, ginger, honey, oil and vinegar. Blend until smooth.
  2. Soak wooden skewers minimum of 30 minutes. Remove from water.
  3. Thread chicken onto skewers.
  4. Pour marinade over chicken and refrigerate 1 hour.
  5. Preheat grill to medium flame. Cook chicken approximately 5 minutes per side or until internal temperature reaches 165ºF.
