Homemade Tater Tots

Serves 6

Ingredients

  • 2 lb Russet potatoes, peeled but left whole
  • 1/2 cup Sour cream
  • 2 Large eggs
  • 2 tbsp Liquid aminos
  • 1 tsp Dried garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp White pepper
  • 1 tsp Chili powder
  • 1 1/2 tbsp Fresh chives, finely diced
  • 1 qt Sunflower oil, (or vegetable oil) as needed for frying

Instructions

  1. Fill a large pot with water, add potatoes and bring to a boil. Cook until potatoes are just starting to soften but are still firmer in texture. Remove from water and allow to cool.
  2. Once cool, use the larger holes on a cheese grater to shred potatoes into a large bowl.
  3. Add remaining ingredients except for the oil. Mix well to combine then form into balls a little smaller than a golf ball. Place on a sheet pan lined with parchment paper.
  4. Refrigerate for at least 30 minutes to allow tots to set up. Meanwhile, add oil to a pot set over medium heat.
  5. Allow oil to reach between 350ºF and 375ºF, adjusting as needed to maintain heat.
  6. Working in batches, use a slotted spoon to drop a few tater tots into hot oil. Fry until golden brown and crispy, approximately 8 to 10 minutes.
  7. Season each batch with salt as it comes out of the oil. Serve while hot and crispy, and garnish with more chives if desired.
