Homemade Spicy Italian Sausage

Serves 6

Ingredients

  • 2 lb 90% Lean ground pork
  • 2 tsp Ground fennel, simply grind seeds in a blender if you can only find fennel seeds
  • 1 1/2 tsp Dried garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 2 tsp Crushed red pepper, or as needed for spice
  • 2 tsp Coarse kosher salt
  • 2 tsp Cracked black pepper
  • 1 tsp Dried oregano
  • 1/2 tsp Ground sage
  • 2 tsp Red wine vinegar

Instructions

  1. In a bowl combine, pork, ground fennel, granulated garlic and onion, paprika, red pepper flakes, salt, pepper, oregano, sage and red wine vinegar.
  2. Mix well to combine, place into a zip-top bag and refrigerate over night to allow meat to marinate.
  3. For usage, simply sauté in a little olive oil until browned and add to pasta dishes, pizza's, soups or any other recipe.
