Unsaved Holiday Texas Caviar

Ingredients

  • 16 oz H-E-B Black-Eyed Peas, frozen
  • 4 oz Diced pimientos
  • 9 oz Canned mushroom stems and pieces, drained and chopped
  • 1/2 cup White onion, chopped
  • 1/2 cup Celery stalks, chopped
  • 1/2 cup Whole jalapeños, canned, chopped, with liquid
  • 1/4 cup Olive oil
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper

Instructions

  1. Cook frozen black-eyed peas according to package directions; drain well.
  2. Place black-eyed peas in a large mixing bowl; add pimiento, onion, celery, mushrooms, jalapeño, olive oil, salt and pepper.
  3. Cover and chill for at least 15 minutes before serving or refrigerate for up to 3 days.
