Ingredients
- 16 oz H-E-B Black-Eyed Peas, frozen
- 4 oz Diced pimientos
- 9 oz Canned mushroom stems and pieces, drained and chopped
- 1/2 cup White onion, chopped
- 1/2 cup Celery stalks, chopped
- 1/2 cup Whole jalapeños, canned, chopped, with liquid
- 1/4 cup Olive oil
- 1/8 tsp Kosher salt
- 1/8 tsp Ground black pepper
Instructions
- Cook frozen black-eyed peas according to package directions; drain well.
- Place black-eyed peas in a large mixing bowl; add pimiento, onion, celery, mushrooms, jalapeño, olive oil, salt and pepper.
- Cover and chill for at least 15 minutes before serving or refrigerate for up to 3 days.
