High Protein Egg Bites

Ingredients
- 6 Large eggs
- 1 tbsp Shallots, chopped
- 1 tbsp Sun-dried tomatoes
- 1 oz Baby spinach
- 1 cup Cottage cheese
- 4 oz Asadero cheese, (or substitute provolone) grated
Instructions
- Preheat oven to 350ºF. Spray 8 wells of a muffin tin with spray oil.
- In a blender, add eggs, shallots, sun-dried tomatoes, spinach, and cottage cheese. Blend until smooth.
- Divide grated cheese evenly among prepared wells and pour egg mixture over cheese, filling each cup to the top.
- Bake for 10 minutes. Remove from oven and allow to sit for 5 minutes before serving.
