High Protein Egg Bites

Unsaved High Protein Egg Bites

Ingredients

  • 6 Large eggs
  • 1 tbsp Shallots, chopped
  • 1 tbsp Sun-dried tomatoes
  • 1 oz Baby spinach
  • 1 cup Cottage cheese
  • 4 oz Asadero cheese, (or substitute provolone) grated

Instructions

  1. Preheat oven to 350ºF. Spray 8 wells of a muffin tin with spray oil.
  2. In a blender, add eggs, shallots, sun-dried tomatoes, spinach, and cottage cheese. Blend until smooth.
  3. Divide grated cheese evenly among prepared wells and pour egg mixture over cheese, filling each cup to the top.
  4. Bake for 10 minutes. Remove from oven and allow to sit for 5 minutes before serving.
