  • 8 Jalapeño pepper
  • 8 slices Bacon, flattened with edge of knife
  • 4 slices Sharp cheddar cheese, cut in half

Instructions

  1. Heat grill on medium, about 375˚F.
  2. Remove a 1-inch slice from top of jalapeños and discard seeds and white membrane.
  3. In a small bowl, mix cream cheese and hickory rub until well incorporated.
  4. Stuff jalapeños with cream cheese mixture and place a half slice of cheddar over cream cheese.
  5. Wrap each stuffed jalapeño with bacon. Use toothpicks to hold bacon in place while grilling.
  6. Grill jalapeño poppers over medium heat until bacon is completely cooked, about 6 minutes per side.
  7. Remove from grill and keep warm in oven until ready to serve.
