Herbed Shrimp Scampi with Zucchini Noodles

Unsaved Herbed Shrimp Scampi with Zucchini Noodles

Ingredients

  • 1 pt Cherry tomatoes, halved
  • 1 tbsp Extra virgin olive oil
  • 3/4 lb Argentine shrimp, peeled and deveined
  • 1 Scampi cooking sauce
  • 2 tbsp Fresh Italian parsley, finely chopped
  • 10.7 oz Zucchini spirals

Instructions

  1. Heat a large skillet over medium high adding tomatoes and oil. Cook for 2 to 3 minutes, just until tomatoes start to wilt.
  2. Add shrimp, stir and cook for 2 to 3 minutes, just until they start to turn whitish-pink.
  3. Turn heat down to medium and add sauce. Stir to coat shrimp. Bring to a simmer and add zucchini spirals to pan. Stir just to heat through, about 2 to 3 minutes.
  4. Remove to serving plates and garnish with fresh parsley.
