Hearty Red and Green Chili

Ingredients

  • 6 oz Beer
  • 1 tbsp Fresh garlic clove(s), finely chopped
  • 1 tsp Mexican oregano
  • 1 cup Red onions, finely chopped
  • 14.5 oz Diced fire roasted tomatoes
  • 8 oz Canned green chiles
  • 2 tsp Tomato bouillon with chicken
  • 1 3/4 lb Ground beef chuck, for chili
  • 1 tsp Ground cumin
  • 4 slices Thick cut bacon, finely chopped

Instructions

  1. Heat a large pot over medium-high heat. Add bacon, and stir and cook until crispy. Remove from pan and set aside.
  2. Add ground beef to same pan, stir and break up meat as it cooks, until well browned, about 10 minutes.
  3. Chef's Note: Black beans are a great optional addition to this hearty chili recipe. If using, add beans at the same time as the tomatoes.
  4. Add cumin, oregano, bouillon, onions and garlic and stir. Cook until onions begin to soften, about 5 minutes.
  5. Add cooked bacon, tomatoes, green chiles and beer. Bring to a simmer and cook 5 to 10 minutes or until tomatoes are soft and beer has mostly been absorbed. Add salt and pepper to taste.
