Hearty Red and Green Chili

Ingredients
- 6 oz Beer
- 1 tbsp Fresh garlic clove(s), finely chopped
- 1 tsp Mexican oregano
- 1 cup Red onions, finely chopped
- 14.5 oz Diced fire roasted tomatoes
- 8 oz Canned green chiles
- 2 tsp Tomato bouillon with chicken
- 1 3/4 lb Ground beef chuck, for chili
- 1 tsp Ground cumin
- 4 slices Thick cut bacon, finely chopped
Instructions
- Heat a large pot over medium-high heat. Add bacon, and stir and cook until crispy. Remove from pan and set aside.
- Add ground beef to same pan, stir and break up meat as it cooks, until well browned, about 10 minutes.
- Chef's Note: Black beans are a great optional addition to this hearty chili recipe. If using, add beans at the same time as the tomatoes.
- Add cumin, oregano, bouillon, onions and garlic and stir. Cook until onions begin to soften, about 5 minutes.
- Add cooked bacon, tomatoes, green chiles and beer. Bring to a simmer and cook 5 to 10 minutes or until tomatoes are soft and beer has mostly been absorbed. Add salt and pepper to taste.
