Hearts Of Palm, Tomato & Avocado Salad

Ingredients

  • 2 Large Roma tomatoes, thin sliced
  • 14.8 oz Hearts of palm
  • 1 Boston lettuce
  • 1/8 tsp Ground black pepper, Crushed
  • 1/8 tsp Kosher salt
  • 1/4 cup Thousand Island dressing
  • 1/2 cup Fresh cilantro, only leaves
  • 6 oz Large avocado

Instructions

  1. Drain hearts of palm, cut crosswise into 1/2-inch thick slices; slice tomatoes thinly, cut avocado halves into thin slices, and pull cilantro leaves from steams.
  2. Arrange lettuce leaves on individual plates or a platter.
  3. Arrange tomato slices, avocado slices and hearts of palm over lettuce.
  4. Season with salt and pepper, drizzle with dressing and serve immediately.
