Heart-Shaped Ribeye with Herb Butter

Ingredients
- 4 oz Unsalted butter
- 1 tbsp Fresh thyme, chopped
- 1/2 tsp Kosher salt
- 1/4 cup Extra virgin olive oil, as needed for brushing on meat
- 2 lb Heart shaped ribeye
- 1/4 cup Fresh chives, thinly chopped
Instructions
- Set a cast iron skillet over medium heat and allow it to get very hot. Meanwhile prepare meat.
- Brush olive oil over steak and season liberally with salt and cracked pepper. Allow to sit at room temperature for at least 20 minutes.
- While steak is resting, place butter in a small saucepan and add chives, thyme and 1/2 teaspoon of salt. Melt butter over medium-low heat and cook until herbs are fragrant. Remove from heat and keep warm.
- Place steak in the hot cast iron skillet and sear 5 to 7 minutes on one side or until steak is nicely marked.
- Flip steak, reduce heat to low and continue to cook to your desired doneness, approximately 10 to 13 minutes for medium-rare.
- Remove steak from heat and allow to rest at least 10 minutes. Drizzle warm herb butter over steak, and season to taste as needed. Garnish with a little more chopped chives if desired.
