Ingredients

  • 2 Hatch pepper, diced small
  • 3 Roma tomatoes, cored, seeds removed, and diced small
  • 1/2 cup White onion, sliced
  • 1/2 cup Fresh cilantro, roughly chopped
  • 1/3 cup Fresh lemons, juiced

Instructions

  1. Combine everything into a bowl and season to taste with salt and pepper. Cover and refrigerate for at least 20 to 30 minutes to allow flavors to develop.
  2. Serve on tacos, or along side grilled meats.
