Harissa and Herb Crusted Lamb Chops

Ingredients

  • 1 Rib natural lamb rack, about 1.5 to 2 lbs
  • 1 tbsp Adams Reserve Mediterranean House All Purpose Rub
  • 1 1/2 tbsp Zwita Mild Harissa Dried Chili Paste
  • 2 tbsp Fresh mint
  • 1/4 cup Italian parsley

Instructions

  1. Preheat oven to 400ºF. Place a baking rack on a baking sheet. Season lamb rack with Adams seasoning. Mince herbs and mix to combine in a small bowl.
  2. Season lamb rack with Adams rub then spread harissa evenly over the top of the lamb.
  3. Mince herbs and mix to combine in a small bowl. Press herb mixture into the harissa then transfer lamb to prepared baking sheet.
  4. Bake for 15 to 20 minutes or until internal temperature reaches 135ºF to140ºF.
