Ham & Cheese Pancakes

Unsaved Ham & Cheese Pancakes

Ingredients

  • 1 1/2 cups Reduced fat 2% milk
  • 1 cup Shredded mild cheddar cheese, regular
  • 1 1/2 cups Whole wheat all purpose baking mix
  • 1 cup Black Forest ham, chopped
  • 2 Large eggs, beaten

Instructions

  1. Heat an electric griddle to 375°F or a large heavy-bottom cast iron skillet 3 minutes on high heat.
  2. Combine cheese, baking mix, eggs, and milk in a 2-quart mixing bowl. Stir batter well.
  3. Spray hot skillet or griddle with nonstick cooking spray.
  4. Sprinkle 1 Tablespoon chopped ham on the skillet for each pancake. Pour 1/4 cup pancake batter over top of ham.
  5. Cook pancakes 1 to 1 1/2 minutes per side. Turn pancakes only once.
  6. Serve with your favorite pancake syrup.
