Ham & Cheese Egg Cups

Ingredients
- 1/4 lb Smoked ham, sliced, cut in half to fit into muffin cups as needed
- 1/2 cup Sharp cheddar cheese, shredded, plus more as needed
- 6 Large eggs

Instructions
- Preheat oven to 350ºF.
- Spray a muffin pan liberally with non-stick spray. Gently tuck ham slices into 6 muffin cups, pressing ham against the sides to create a bowl shape.
- Add approximately one tablespoon of cheese to each cup of ham and crack an egg in the center.
- Season eggs with a pinch of salt and pepper. Bake for 20 to 25 minutes until eggs are just set in the center.
- Remove and allow to cool slightly before serving. Garnish with fresh chives if desired.
