Ham & Cheese Egg Cups

Unsaved Ham & Cheese Egg Cups

Ingredients

  • 1/4 lb Smoked ham, sliced, cut in half to fit into muffin cups as needed
  • 1/2 cup Sharp cheddar cheese, shredded, plus more as needed
  • 6 Large eggs

Instructions

  1. Preheat oven to 350ºF.
  2. Spray a muffin pan liberally with non-stick spray. Gently tuck ham slices into 6 muffin cups, pressing ham against the sides to create a bowl shape.
  3. Add approximately one tablespoon of cheese to each cup of ham and crack an egg in the center.
  4. Season eggs with a pinch of salt and pepper. Bake for 20 to 25 minutes until eggs are just set in the center.
  5. Remove and allow to cool slightly before serving. Garnish with fresh chives if desired.
