Ham and Pimento Cheese Flatbread

Ingredients

  • 1 cup Pimento Cheese
  • 2 Vegan Naan Bread
  • 1 cup Applewood Smoked Uncured Ham, sliced on # 2 then cut into 1 inch cubes
  • 2 cups Watercress leaves, washed and dried, leaves picked
  • 1/2 cup Red grapes, stems removed, halved
  • 1 Gala apple, cored, medium diced
  • 1/4 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 1 1/2 tbsp Extra Virgin Olive Oil
  • 1 tsp Lemon juice

Instructions

  1. Preheat oven to 400ºF. Line a sheet pan with foil and set aside.
  2. Spread half of pimento cheese on each naan bread, leaving 1/2 inch around edges. Arrange ham cubes on top and press down gently.
  3. Place on prepared sheet pan and bake 8 to 10 minutes or until naan is browned and cheese is melted.
  4. Meanwhile, combine watercress leaves, grapes, apples, salt, pepper, olive oil, and lemon juice in a medium bowl and toss well to coat.
  5. Remove flatbreads from oven and top with watercress salad mixture and serve immediately.
