Gulf Coast Gazpacho

Ingredients

  • 14 oz Medium Pico De Gallo, medium, mild or hot
  • 1 tbsp Fresh lime juice
  • 8 oz Cooked medium shrimp, peeled, deveined
  • 1 cup Hot house cucumbers, peeled, seeded and finely diced
  • 32 fl oz Clamato tomato juice cocktail
  • 1/4 cup Fresh cilantro, leaves only, finely chopped
  • 1 Lime(s), wedge
  • 2 tsp Tajin seasoning

Instructions

  1. Drain pico de gallo in a fine mesh strainer then transfer to a large bowl. Add lime juice, shrimp, cucumber, Clamato and cilantro. Stir to combine.
  2. Rub rim of each serving glass with a lime wedge and rim glass with Tajin seasoning. Ladle in gazpacho and serve.
  3. Chef's Note: Top with fresh avocado if desired.
