Gulf Coast Ceviche

Serves 4
Ingredients
- 1/8 tsp Kosher salt
- 1 lb Pangasius fillets
- 1 lb Shrimp, peeled and deveined
- 12 oz Mango Pico de Gallo
- 1 Limes, zest and juiced
- 1/3 cup Lemon Olive Oil
- 1 tsp Crushed Red Pepper Flakes
- 4 tsp Citrus seafood rub
- 8 oz Frozen domestic crawfish tail meat
- 1 lb Bay scallops
Instructions
- Preheat oven to 400°F.
- Dice shrimp and pangasius fillets.
- Toss shrimp, scallops and both fish meats in lemon oil and place on a flat baking sheet.
- Roast in oven for 8-10 minutes, until seafood is just cooked. Chill immediately.
- Combine chilled seafood with the remaining ingredients. Season with salt and chill overnight.
