Gulf Coast Ceviche

Serves 4

Ingredients

  • 1/8 tsp Kosher salt
  • 1 lb Pangasius fillets
  • 1 lb Shrimp, peeled and deveined
  • 12 oz Mango Pico de Gallo
  • 1 Limes, zest and juiced
  • 1/3 cup Lemon Olive Oil
  • 1 tsp Crushed Red Pepper Flakes
  • 4 tsp Citrus seafood rub
  • 8 oz Frozen domestic crawfish tail meat
  • 1 lb Bay scallops

Instructions

  1. Preheat oven to 400°F.
  2. Dice shrimp and pangasius fillets.
  3. Toss shrimp, scallops and both fish meats in lemon oil and place on a flat baking sheet.
  4. Roast in oven for 8-10 minutes, until seafood is just cooked. Chill immediately.
  5. Combine chilled seafood with the remaining ingredients. Season with salt and chill overnight.
