Ingredients

  • 1 Red bell pepper, cored, seeded and roughly chopped
  • 1 Green bell pepper, roughly chopped
  • 1 Zucchini squash, roughly chopped
  • 1 Cucumber, roughly chopped
  • 1 bunch Cilantro, roughly chopped
  • 1 bunch Curly leaf parsley, roughly chopped
  • 1 tbsp Chicken Fajita Spice Blend
  • 15.5 oz Marinara sauce
  • 1/4 cup Extra virgin olive oil
  • 2 Limes, juiced
  • 1 1/2 cups Low sodium vegetable broth

Instructions

  1. Place vegetables and fajita seasoning in food processor and mince.
  2. Add marinara sauce, oil, lime juice, and broth.
  3. Chill 30 minutes before serving.
