Guacamole Deviled Eggs with Crispy Chorizo

Ingredients
- 12 oz Chorizo
- 12 Large Eggs, hard boiled, cooled and peeled completely
- 16 oz Cilantro Lime Cotija Guacamole, as needed for stuffing eggs
- 1 cup Queso Fresco, crumbled, as needed for garnishing
Instructions
- Place a non-stick sauté pan over medium heat add chorizo, crumble and cook until fully cooked and slightly crispy.
- Remove chorizo with a slotted spoon to drain on a paper towel. Set aside to cool.
- Meanwhile, assemble eggs by cutting hard boiled eggs in half and discard yolks or save for another use.
- Place halved eggs onto a serving dish and place a large spoonful of guacamole into each egg. Garnish each with crumbled chorizo and queso fresco.
