Grilled Zucchini with Lemon Parmesan Vinaigrette

Unsaved Grilled Zucchini with Lemon Parmesan Vinaigrette

Ingredients

  • 4 Large zucchini squash, tops and bottoms trimmed then cut lengthwise in long slices, approximately 2 to 4 slices per zucchini
  • 1 cup Parmigiano Reggiano Cheese, shredded or grated
  • 1/3 cup Fresh lemons, juiced
  • 1/4 cup Cold water
  • 3 Peeled Garlic Cloves, crushed
  • 1 tbsp Ground black pepper, plus more as needed to season
  • 3/4 cup Extra virgin olive oil

Instructions

  1. Preheat grill to medium-high, approximately 350ºF.
  2. While grill preheats, lay zucchini out on a sheet pan fitted with a wire rack and season both sides liberally with salt and pepper. Set aside.
  3. While zucchini is marinating, make vinaigrette by combining Parmesan cheese, lemon juice, water, garlic and pepper in a blender. Pulse until smooth and creamy.
  4. With blender running on high speed, slowly add oil and allow to run until mixture gets thick, approximately 1 to 2 minutes. Season to taste and refrigerate for later use.
  5. Once grill is hot, spray zucchini liberally with non-stick spray then place on grill and cook 2 to 4 minutes per side or until zucchini are all nicely marked.
  6. Transfer to a serving dish, drizzle with vinaigrette as needed and garnish with fresh herbs. Remaining vinaigrette will keep up to a week in the refrigerator.
