Grilled Veggie Chopped Salad

Serves 4
Ingredients
- 9 oz Chopped romaine lettuce
- 3 tbsp Fresh lemon juice, plus more as needed
- 1/4 cup Extra Virgin Olive Oil, plus more as needed
- 1/4 cup Roasted, Salted Sunflower Seeds, as needed
- 1/2 cup Crumbled feta, plus more as needed
- 15 oz Vegetable Kabob, approximately 2 kabobs, skewers removed
Instructions
- Preheat grill to medium-high.
- Toss vegetables in oil with a liberal pinch of salt and pepper. Place on grill and cook until nicely marked on all sides.
- Remove vegetables from grill, allow to cool then chop.
- To assemble salad, place chopped salad greens in bowl, add chopped veggies, feta cheese and sunflower seeds.
- Add lemon juice and toss everything together to mix well. Season to taste.
- To serve, dress salad with any vinaigrette or simply dress with more lemon juice and olive oil.
