Grilled Tri-Tip with Cowboy Butter

Ingredients

  • 1/2 tsp Chili powder
  • 1 cup Cooked bacon, about 6 strips
  • 8 oz Unsalted butter, set at room temperature
  • 2 Fresh garlic, smashed
  • 1 tsp Ground cumin
  • 1/2 tsp Cayenne pepper
  • 2 lb Tri-tip steak

Instructions

  1. Preheat grill to around 375ºF. or medium high heat.
  2. In a food processor combine butter, garlic, bacon bits, cumin, chili powder, cayenne pepper.
  3. Pulse everything until smooth, and season as needed with salt and pepper. Refrigerate until ready to use.
  4. Season tri-tip as needed with salt and pepper, and grill until desired doneness.
  5. 145ºF internal temperature for tri-tip is preferred. Chef's note: 145ºF internal temperature is considered medium.
  6. Allow steak to rest, place a few spoonfuls of butter on top to melt, season as needed. Butter will keep up to 1 week refrigerated.
