Grilled Tri Tip with Charred Tomatoes

Ingredients

  • 1 1/4 lb Tri tip beef steak
  • 1/4 tsp Kosher salt
  • 1 tsp Ground black pepper
  • 1 Fresh garlic clove, minced
  • 1 tbsp Balsamic vinegar
  • 2 tbsp Extra virgin olive oil, divided
  • 4 Plum tomatoes

Instructions

  1. Preheat grill to medium-high.
  2. Place tri tip in a dish or bowl and sprinkle with salt, pepper, garlic, balsamic vinegar and 1 tablespoon olive oil. Allow steak to come to room temperature, approximately 30 minutes.
  3. Meanwhile, cut plum tomatoes in half and toss in remaining olive oil and a bit of salt. Set aside.
  4. Grill tri tip 8 minutes per side.
  5. Place tomatoes cut side down on grill 3 minutes or so until skin blisters but tomatoes remain firm.
  6. Let steak rest several minutes before slicing. Serve with grilled tomatoes.
