Grilled Swordfish with Leeks and Citrus

Ingredients

  • 2 lb Fresh swordfish loin, sliced into 4 steaks
  • 8 tsp Adams Reserve Seafood House All Purpose Rub, divided use
  • 2 Fresh leeks
  • 2 Fresh blood oranges
  • 2 Fresh small navel oranges
  • 4.5 oz Rustico di Casa Asaro Castelvetrano Green Olives, drained and smashed
  • 1/4 cup Rustico di Casa Asaro Unfiltered Extra Virgin Olive Oil

Instructions

  1. Preheat grill to 400ºF.
  2. Evenly season both sides of swordfish with 7 teaspoons of seafood seasoning. Set aside.
  3. Cut greens off the leeks and slice remaining portion in half lengthwise. Rinse off any sand or dirt and pat dry.
  4. Slice off the ends of 1 orange. Following the natural curve of the orange with your knife, slice the peel and pith away to expose just the orange flesh. Once peeled, lay orange on its side and slice crosswise into rounds. Repeat with remaining oranges.
  5. Grill leeks for about 10 minutes, turning every few minutes until the outside is charred. Transfer to a cutting board and let cool while the fish cooks.
  6. Spray seasoned fish with non-stick spray and grill for 6 to 7 minutes, flipping halfway through. Meanwhile, slice grilled leeks. Place in a bowl, and add olives, remaining seafood seasoning, and olive oil. Toss to coat.
  7. Divide orange slices among 4 plates and place grilled fish on top. Spoon olive and leek mixture over the fish and serve.
