Grilled Smashed Potatoes

Ingredients
- 12 Small Baby red potato(es), washed and rinsed
- 3 tbsp Basil infused olive oil
- 1/4 tsp Cracked black pepper
- 1/4 tsp Kosher salt
Instructions
- Place potatoes in a 4-quart pan with enough water to cover potatoes.
- Bring water to a boil over high heat, reduce to medium and cook potatoes 25 minutes or until fork tender.
- Place a grilling mesh on a sheet pan or tray and spray with non-stick cooking spray.
- Gently smash each potato, keeping it together as much as possible.
- Place potatoes on prepared grilling mesh and brush with olive oil.
- Heat gas or charcoal grill to 350°F.
- Place grilling mesh with potatoes on grill, close cover and grill 10 minutes or until golden.
- Place potatoes on a platter and top each with fresh cracked pepper and salt.
