Grilled Smashed Potatoes

Ingredients

  • 12 Small Baby red potato(es), washed and rinsed
  • 3 tbsp Basil infused olive oil
  • 1/4 tsp Cracked black pepper
  • 1/4 tsp Kosher salt

Instructions

  1. Place potatoes in a 4-quart pan with enough water to cover potatoes.
  2. Bring water to a boil over high heat, reduce to medium and cook potatoes 25 minutes or until fork tender.
  3. Place a grilling mesh on a sheet pan or tray and spray with non-stick cooking spray.
  4. Gently smash each potato, keeping it together as much as possible.
  5. Place potatoes on prepared grilling mesh and brush with olive oil.
  6. Heat gas or charcoal grill to 350°F.
  7. Place grilling mesh with potatoes on grill, close cover and grill 10 minutes or until golden.
  8. Place potatoes on a platter and top each with fresh cracked pepper and salt.
