Grilled Shrimp Brocheta

Serves 4
Ingredients
- 2 tbsp Extra virgin olive oil
- 2 Medium lime(s), juiced
- 2 tsp Orange pepper seasoning, divided use
- 1 Large red bell pepper, cored, seeded and cut into 3/4-inch pieces
- 1/2 Small sweet onion, cut into 3/4 inch pieces and separated
- 1 tbsp Honey
- 1 lb Red Argentine Shrimp, peeled and deveined
- 6 oz Pineapple, cubed
Instructions
- Preheat grill to medium high heat.
- Add oil, lime juice and half of seasoning to a large zip top bag. Add bell pepper and onions to bag. Toss gently to coat evenly with oil. Remove vegetable from bag to a plate.
- Add honey to bag. Rub bag to mix honey, oil and seasoning evenly. Add shrimp. Toss gently to coat.
- Thread bell pepper, onions, shrimp and pineapple chunks onto skewers. Sprinkle with remaining seasoning.
- Grill 2 to 3 minutes on each side, or until shrimp turns white/pink and is cooked through. Serve immediately as an appetizer or main course. Garnish with fresh cilantro if desired.
