Grilled Romaine Hearts with Marinated Feta Dressing

Serves 6
Ingredients
- 4 oz Crumbled feta, plus more as needed
- 1 tsp Dried oregano
- 1 Garlic clove, zested or minced fine
- 2 tbsp Red wine vinegar
- 1 tbsp Coarse ground dijon mustard
- 1 tsp Lemon, zest only
- 1/2 cup Extra virgin olive oil, plus more as needed for romaine
- 3 Romaine hearts, ends trimmed and hearts cut in half lengthwise
Instructions
- Preheat grill to medium high heat, approximately 350 to 400F.
- While grill preheats, combine feta, oregano, garlic, red wine vinegar, mustard, lemon zest and olive oil together.
- Toss well to combine. Allow to sit while grilling romaine to allow flavors to set up.
- When grill is hot, brush romaine with olive oil, and season liberally with salt and pepper.
- Grill romaine cut side down for just a few minutes or until romaine is just slightly charred and marked. Remove from grill and allow to cool slightly.
- To serve place a side of grilled romaine on a plate and drizzle with marinated feta mixture, season each to taste with salt and cracked pepper.
