Grilled Rockfish Pouches

Ingredients
- 1 tbsp Coarse kosher salt
- 1 Fresh shallots, chopped in coins
- 1 Lemon(s), juiced
- 2 Fresh Roma tomato(es), sliced in coins
- 3 Red potatoe(s), thin sliced
- 2 lb Rockfish, skin off
Instructions
- Preheat grill to medium-high heat.
- Take 16 inches of foil and fold it in half. Place fish, shallots, tomatoes and red potatoes on one side of the foil and season with salt.
- Crimp and fold all ingredients in foil.
- Place foil pouch on grill and cook for 17 minutes, rotating the pouch every 2 to 3 minutes.
- Remove from grill and sprinkle lemon juice over the top.
