Grilled Rockfish Pouches

Ingredients

  • 1 tbsp Coarse kosher salt
  • 1 Fresh shallots, chopped in coins
  • 1 Lemon(s), juiced
  • 2 Fresh Roma tomato(es), sliced in coins
  • 3 Red potatoe(s), thin sliced
  • 2 lb Rockfish, skin off

Instructions

  1. Preheat grill to medium-high heat.
  2. Take 16 inches of foil and fold it in half. Place fish, shallots, tomatoes and red potatoes on one side of the foil and season with salt.
  3. Crimp and fold all ingredients in foil.
  4. Place foil pouch on grill and cook for 17 minutes, rotating the pouch every 2 to 3 minutes.
  5. Remove from grill and sprinkle lemon juice over the top.
